The menu changes frequently to offer the highest quality ingredients of each season. With a foundation of classical French influence with a lighter and more contemporary twist, the food at Bistro Vendôme is comfortable and hearty. This heartwarming bistro fare is described by Chef Roeder as “French soul food.”

Vesta, the Goddess of the Hearth, is the most beautiful of Roman divinities, bright and pure like the flame that is her symbol. Her name derives from a Sanskrit root, vas, which expresses the idea of "shining." Latins made Vesta a goddess who personified the earth and fire. She presided over the preparation of meals: Vesta was offered the first food and drink.

In addition to taste-tempting dinner and lunch menus with something for every taste, appetite and budget, Sapphire offers Vail's only "raw bar" complete with the freshest-available oysters, crack-and-peel shrimp and other delicacies from the sea.
