Recipe

Make surface cuts on chicken. Set aside.

Heat cooking oil in a pan over medium heat and add onion, ginger, and garlic. Cook with the lid on until mixture turns golden brown. Add chicken to mixture and cook, stirring occassionally, for about 5-7 minutes, or until the meat starts to brown.  Add the salt, turmeric, garam masala, coriander, and red pepper, and continue to cook for 5-7 minutes longer, stirring occassionally. Add tomatoes and continue cooking until tomatoes are mixed well with the chicken and spices. Add water to the mix, adding more if needed to completely submerge chicken under water. Bring to boil, lower heat to medium, and cook until chicken is tender.

To serve: garnish with fresh cilantro and serve with rice, roti, or naan.


Recipe Note:

Crushed red peppers can be substituted by whole red pepeprs if desired, for a spicier flavor.

2 lb. skinless chicken, with or without bones 4 Tbsp. cooking oil 1 medium onion, chopped 1 1-inch piece ginger, finely chopped or grated 4 cloves garlic, finely chopped or crushed to taste salt 1 tsp. Turmeric powder 1/2 tsp. garam masala 2 tsp. ground coriander 1/2 tsp. crushed red pepper (adjust to taste) 2 medium tomatoes, chopped 2 C. water (or more if needed) 2 Tbsp. fresh cilantro
