Excellent as always with the exception of a missed main course. Although apologetic and effusive in trying to deal with it, it was a problem.
Personally I have a deep dislike of telling a customer the good will just be two minutes when it quite obviously won’t be. This leaves everyone else on the table in suspended animation and anxious.
Just offer to take the existing good back and hold it hot then reserve. At the same time for everyone.
Or at least offer the choice.
