The food of Peking (Beijing) and Canton (Guangdong) provinces are considered amongst the eight culinary traditions of Chinese cuisines. The characteristics of Beijing in northern China are mostly famous for its fiery spiciness, which comes from the liberal use of chilies and garlic. As for Guangdong, the flavours of the dish are well balanced, where sauces and other condiments are crucial to create a light and mellow taste.
