Our Dishes are inspired by both traditional and modern Italian recipes from the cuisine offered throughout many varied regions of Italy, from the Piedmont in the North to Sicily in the South. We have also added a few local favourites from the Hunter Region which is renown for its wines and local produce. Our Menu is made for sharing as is the custom in homes throughout Italy, and certainly in my childhood home growing up, when guests were many and always welcome. - Giovanni Calvi in collaboration with Chef Stefano Giano
